I originally thought about making a tomatilla marmalade and so I did one night at home. All the next day I could not stop thinking that sometimes chocolate tasted like cumin to me. So I paired the two. In my mind it needed something else and the banana did it. I made this dish before I had a dehydrtor so I had to do it in my oven while i slept. (I woke up a couple of times to check on it!). With the corriander caramel it was a natural match not only with the region of the ingredients used but the almost lemon flavor that it gives. If I did this dish again I would add something to freshen the dish like salt to the caramel, basil something, or mint.
