“Salmon Tartare”

“Sockeye Salmon Tartare, Pickled Jalapeno, Jalapeno

Pickled Mango, Garlic Chips, Cilantro”

I had some leftover salmon that my parents had bought and I cured it for 12 hours with the usual lemon and orange zest, cayanne, salt, and sugar. Then I chopped it up with a little more salt. I pickled the jalapenos and after they had sat in the pickling liquid for several hours my girlfriend said to put mango scrap (mango was an earlier snack)  into the mixture. I followed the whole French Laundry recipe for the garlic chips but only 1 out of 10 looked like his. The cilantro was a fresh additive to the dish. Everyone who ate this told me to remember it because they loved it.
